  • 1 head cauliflower
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 lime juiced
  • 1/2 cup cotija cheese, crumbled
  • Fresh cilantro, for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into florets.
  3. In a large bowl, toss the cauliflower with olive oil, chili powder, smoked paprika, garlic powder, salt, and pepper.
  4. Spread the seasoned cauliflower on a baking sheet and roast for about 25-30 minutes until golden and tender.
Finishing Touches
  1. Once the cauliflower is cooked, remove it from the oven and let it cool slightly.
  2. Drizzle the lime juice over the roasted cauliflower and sprinkle with cotija cheese and chopped cilantro.
  3. Serve warm as a side dish or the main course.

Notes

For extra crunch, consider adding crushed tortilla chips on top before serving. Experiment with different cheeses if cotija is hard to find; feta or goat cheese can work well too. Adjust the spices according to your taste – feel free to add more chili powder for extra heat. If you prefer a smoky flavor, try adding some smoked paprika to the seasoning mix.
