- Once the cauliflower is cooked, remove it from the oven and let it cool slightly.
- Drizzle the lime juice over the roasted cauliflower and sprinkle with cotija cheese and chopped cilantro.
- Serve warm as a side dish or the main course.
Notes
For extra crunch, consider adding crushed tortilla chips on top before serving. Experiment with different cheeses if cotija is hard to find; feta or goat cheese can work well too. Adjust the spices according to your taste – feel free to add more chili powder for extra heat. If you prefer a smoky flavor, try adding some smoked paprika to the seasoning mix.
