Ingredients
  

Cake Base
  • 1 pack Lemon Cake Mix
  • 2 cans (15.75 oz) lemon pie filling
  • 8 oz cream cheese (slightly cold) Cut into small cubes.
  • 1 cup unsalted butter (cold) Cut into thin pats.
  • ½ tsp vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Lightly spray a 9×13-inch baking dish with cooking spray, and rub a bit of butter into the corners.
  2. Spoon the lemon pie filling into the dish and spread it gently.
  3. Cut the cream cheese into small cubes and tuck them across the filling.
  4. Sprinkle the lemon cake mix evenly on top.
  5. Dot the top with slices of cold butter and sprinkle with salt. Drizzle the vanilla extract on top.
Baking
  1. Bake at 350°F for about 40-44 minutes until the top is golden and the edges are bubbly.
  2. If the top browns too quickly, cover loosely with foil for the last few minutes.

Notes

This cake is delicious on its own or served warm with ice cream or whipped cream and fresh berries.
