Ingredients
  

For the taco filling
  • 1 can white beans, drained and rinsed
  • 2 tablespoons buffalo hot sauce
  • 1 cup shredded cheese (cheddar or your preference)
  • 8 small corn or flour tortillas
  • Oil for frying Oil for frying
  • to taste salt and pepper
Optional toppings
  • diced avocado
  • cilantro
  • sour cream
  • lime wedges for serving

Method
 

Preparation
  1. In a mixing bowl, smash the white beans with a fork or potato masher until mostly smooth. Stir in buffalo hot sauce, and season with salt and pepper.
  2. Heat oil in a frying pan over medium heat.
Cooking
  1. Take a tortilla and place a spoonful of the bean mixture on one half. Top with a sprinkle of cheese. Fold the tortilla over to create a taco shape.
  2. Carefully place the taco in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  3. Repeat with the remaining tortillas.
Serving
  1. Serve the tacos warm, topped with your choice of optional toppings, and lime wedges on the side.

Notes

For extra crunch, consider adding some finely chopped bell peppers or onions to the bean mixture. Use a non-stick frying pan to make cooking easier and prevent sticking. If you’re out of tortillas, you can use lettuce leaves for a lighter version of these tacos.
