Preparation
  1. In a large bowl, combine the chickpeas, celery, and red onion.
  2. In a separate bowl, mix the vegan mayonnaise, hot sauce, apple cider vinegar, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and stir to combine.
  4. Serve on lettuce leaves or use as a filling for sandwiches.

Notes

For a crunchier texture, add some diced bell peppers. Adjust the level of hot sauce to suit your taste. Add fresh herbs like parsley or cilantro for extra flavor. This salad pairs well with a side of fruit or chips. Store in an airtight container in the fridge for up to three days. Avoid freezing as the texture may change.
