Ingredients
  

Buddha Bowl Ingredients
  • 1 cup cooked quinoa Can be made ahead
  • 1 cup cooked chickpeas Can be made ahead
  • 1 cup steamed broccoli Steam until bright green but firm
  • 1 cup shredded carrots
  • 1 cup diced bell peppers
  • 1 unit avocado, sliced Add just before serving
Rainbow Tahini Drizzle Ingredients
  • 1/4 cup tahini Can thin with water if needed
  • 2 tablespoons lemon juice Adjust for taste
  • 1 tablespoon maple syrup Adjust for sweetness
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Method
 

Building the Bowl
  1. In a large bowl, layer the cooked quinoa, chickpeas, broccoli, carrots, bell peppers, and avocado.
Making the Sauce
  1. In a separate bowl, whisk together the tahini, lemon juice, and maple syrup until smooth. If the sauce is too thick, add water until desired consistency is reached.
Finishing Touches
  1. Drizzle the Rainbow Tahini Sauce over the Buddha bowl.
  2. Season with salt and pepper and garnish with fresh herbs if desired.
  3. Serve immediately and enjoy!

Notes

For storage, keep components separately for best texture. Use lemon wedges and warm bread for serving.
