  • 2 cups cottage cheese You can use low-fat or full-fat cottage cheese.
  • 1 cup blueberries (fresh or frozen) If using frozen blueberries, do not thaw them.
  • 1.5 cups rolled oats Do not use quick oats for better texture.
  • 1/4 cup honey or maple syrup You can replace with more sweetener to taste.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs Substitute with a vegan binder for a vegan option.
  • 1/2 cup milk (or a dairy-free alternative) Use plant milk for a dairy-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the cottage cheese, oats, honey, vanilla, cinnamon, and salt.
  3. Add in the eggs and milk, and mix until well combined.
  4. Gently fold in the blueberries.
Baking
  1. Pour the mixture into the greased baking dish and spread evenly.
  2. Bake for 30-35 minutes, or until the top is golden and set.
  3. Let it cool for a few minutes before serving.

Notes

Serve warm in squares or scoops. Add a drizzle of extra honey or a few fresh blueberries on top. Store in the fridge for up to 4 days or freeze for longer storage.
