Ingredients
  

For the Blueberry Filling
  • 6 cups fresh or frozen blueberries (no need to thaw if frozen)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 lemon Zest of one lemon (optional)
For the Cobbler Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted (1 stick)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Place the 1/2 stick of melted butter into a 9x13 inch baking dish, tilting the dish to coat the bottom evenly.
  2. In a large mixing bowl, gently toss the blueberries with the 1/2 cup sugar, cornstarch, lemon juice, vanilla, and lemon zest until the berries are evenly coated. Set aside.
Making the Topping
  1. In the same bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Pour in the milk and stir until you have a smooth, lump-free batter.
Assembly and Baking
  1. Pour the batter directly over the melted butter in the baking dish. Do not stir.
  2. Carefully spoon the blueberry mixture evenly over the top of the batter. Do not stir.
  3. Bake for 45-50 minutes, or until the top is golden brown and the blueberry filling is bubbling.
  4. Remove from the oven and let it cool for at least 15-20 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. For storage, cover tightly or transfer to an airtight container.
