Preparation
- Preheat your oven to 375°F (190°C). Place the 1/2 stick of melted butter into a 9x13 inch baking dish, tilting the dish to coat the bottom evenly.
- In a large mixing bowl, gently toss the blueberries with the 1/2 cup sugar, cornstarch, lemon juice, vanilla, and lemon zest until the berries are evenly coated. Set aside.
Making the Topping
- In the same bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Pour in the milk and stir until you have a smooth, lump-free batter.
Assembly and Baking
- Pour the batter directly over the melted butter in the baking dish. Do not stir.
- Carefully spoon the blueberry mixture evenly over the top of the batter. Do not stir.
- Bake for 45-50 minutes, or until the top is golden brown and the blueberry filling is bubbling.
- Remove from the oven and let it cool for at least 15-20 minutes before serving.
Notes
Serve warm with vanilla ice cream or whipped cream. For storage, cover tightly or transfer to an airtight container.
