Ingredients
  

For the Cake Batter
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 2 cups fresh blackberries Gently fold in to maintain swirl effect

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together sugar and butter until light and fluffy.
  3. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with sour cream. Begin and end with dry ingredients.
  6. Fold in blackberries gently, being careful not to break them.
  7. Pour the batter into the prepared cake pan, smoothing the top.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool before serving.

Notes

This cake is delicious on its own, but can also be served with a dollop of whipped cream or a sprinkle of powdered sugar. For longer storage, wrap tightly in plastic wrap and freeze for up to three months.
