Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, cream together sugar and butter until light and fluffy.
- Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with sour cream. Begin and end with dry ingredients.
- Fold in blackberries gently, being careful not to break them.
- Pour the batter into the prepared cake pan, smoothing the top.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
Notes
This cake is delicious on its own, but can also be served with a dollop of whipped cream or a sprinkle of powdered sugar. For longer storage, wrap tightly in plastic wrap and freeze for up to three months.
