Ingredients
  

Salad ingredients
  • 1 medium honeydew melon, (cubed) Choose a ripe honeydew for the best sweetness.
  • 1 cup blackberries Fresh blackberries should be firm and plump.
  • 4 large basil leaves, (chiffonade cut)
Dressing ingredients
  • 2 tbsp olive oil, (extra virgin)
  • 2 tbsp lemon juice, (freshly squeezed)
  • 2 tsp liquid honey, (or maple syrup for vegan diet) Use maple syrup for a vegan option.
  • 1/2 tsp poppy seeds, (optional) Optional for added texture.
  • sea salt to taste

Method
 

Preparation
  1. Slice honeydew melon in half and remove seeds.
  2. Cut into strips, then slice into bite-sized pieces, being careful not to cut all the way through the rind.
  3. Remove rind by running a knife between the edge of the rind and the base of the cuts you just made.
  4. Arrange honeydew pieces on a platter with blackberries.
  5. Garnish with basil leaves.
Dressing
  1. Whisk dressing ingredients together and drizzle on salad just before serving.

Notes

Serve as a side dish or light meal. This salad is great for summer picnics or barbecues. Store leftovers in an airtight container in the refrigerator for up to two days.
