Blackberry Dumplings

Ingredients
  

For the Blackberry Sauce
  • 1 pound blackberries (fresh or frozen)
  • 1 cup granulated sugar
  • 1 cup water
  • 1 Tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
For the Dumplings
  • 2 cups sifted flour
  • 3 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • 6 Tablespoons unsalted butter (cold and cut into pieces)
  • ¾ cup buttermilk
  • ½ teaspoon vanilla extract

Method
 

Blackberry Sauce
  1. In a medium pot, combine blackberries, 1 cup sugar, water, lemon juice, ground cinnamon, and vanilla extract.
  2. Cook over medium heat, stirring occasionally until the mixture is thick and bubbly.
  3. Remove from heat.
Dumplings
  1. In a large bowl, mix flour, baking powder, ground cinnamon, salt, and sugar.
  2. Add the cold butter pieces and mix until crumbly.
  3. Pour in the buttermilk and stir until just combined.
Assembly & Cooking
  1. Pour the blackberry sauce into a baking dish.
  2. Drop spoonfuls of dumpling batter onto the blackberry sauce.
  3. Bake at 350°F (175°C) for 25-30 minutes or until the dumplings are golden brown and cooked through.

Notes

Serve with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or oven.
