Method
Prepare the Pizza Crust
- On a lightly floured surface, roll out pizza crust to desired thickness, about 3/8 of an inch.
- Allow the crust to rest, covered with a clean towel, in a warm area while preparing the toppings.
Grilling the Crust
- Preheat the grill to 500ºF or as close as possible.
- Once heated, lower the heat to the lowest level and place the dough directly on the grill, closing the lid.
- Cook the dough for 2 to 4 minutes without opening the lid until the bottom is crisp and has grill marks.
Assemble the Pizza
- Remove the crust from the grill and return grill to high heat.
- Spread a thin layer of olive oil on the toasted side of the dough.
- Layer with pizza sauce, cheese, bacon, blackberries, and basil. Add salt and pepper to taste.
- Return the topped pizza to the grill with the raw side down, lower heat to the lowest setting, and close the lid.
- Cook for 4 to 6 minutes without opening the lid until grill marks are visible on the bottom.
- Move to the upper level or indirect heat until the cheese is melted and bubbly.
Serving
- Serve hot from the grill, sliced into wedges. Pairs well with a salad or fresh fruit.
Notes
For best flavor, use fresh blackberries. Experiment with different cheeses and toppings.
