Ingredients
  

For the sausage and gravy
  • 1 lb breakfast sausage (pork or turkey) Use high-quality sausage for the best flavor.
  • 1/4 cup all-purpose flour Sprinkle over cooked sausage to make the gravy.
  • 2 1/2 cups milk, whole or 2% Gradually whisk into the sausage and flour mixture.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder (optional) Can be omitted if not preferred.
  • 1/4 tsp crushed red pepper flakes (optional) Add for heat.
For the casserole
  • 2 cans refrigerated biscuit dough (about 16 oz / 450 g) Homemade biscuits can be used if preferred.
  • 1/2 cup shredded cheddar cheese Optional, can use other cheese varieties.
  • to taste Chopped fresh parsley or chives For garnish before serving.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish lightly with butter or non-stick spray.
Cooking the sausage
  1. In a large skillet over medium heat, cook sausage until fully browned, breaking it into small crumbles.
  2. Drain excess fat if necessary.
Making the gravy
  1. Sprinkle flour over the cooked sausage, stirring for 1–2 minutes to remove raw flour taste.
  2. Gradually whisk in the milk, ensuring no lumps remain.
  3. Simmer for 5–7 minutes until thickened and season with salt, pepper, garlic powder, and optional red pepper flakes.
Preparing the biscuits
  1. Cut each biscuit into halves or quarters depending on the desired size.
Assembling the casserole
  1. Spread half of the biscuit pieces in the bottom of the baking dish.
  2. Pour half of the sausage gravy over the biscuits.
  3. Layer the remaining biscuit pieces on top and then pour the rest of the gravy.
  4. Sprinkle cheese on top if using.
Baking
  1. Bake uncovered for 20–25 minutes, until the biscuits are golden and the casserole is bubbly.
  2. Let it cool for 5 minutes before garnishing with parsley or chives.

Notes

This casserole is great served warm out of the oven. You can enjoy it with fresh fruit or a light salad.
