- Toast the guajillo and ancho chiles in a dry skillet until fragrant, then soak them in hot water for about 20 minutes.
- In a blender, combine the soaked chiles, garlic, onion, bay leaves, cumin, oregano, and a bit of the soaking water to create a smooth sauce.
- Season the beef with salt and pepper and place it in a slow cooker.
Cooking the Beef
- Pour the sauce over the beef, cover, and cook on low for 8 hours.
- Once cooked, shred the beef with two forks.
Making the Tacos
- Heat a skillet over medium heat.
- For each taco, dip a corn tortilla in the consommé, then place it in the skillet.
- Add some shredded beef and cheese, fold, and cook until the tortilla is crispy and the cheese is melted.
- Serve the tacos with a side of consommé for dipping.
Notes
For more flavor, marinate the beef in the sauce overnight before cooking. Ensure to thoroughly toast the chiles for a richer taste. You can experiment with different types of cheese for variation.
