  • 2 lbs beef chuck roast Ideal cut for slow cooking.
  • 3 units dried guajillo chiles For flavoring.
  • 2 units dried ancho chiles Add depth to the sauce.
  • 4 cloves garlic Whole, for blending.
  • 1 onion, chopped Adds sweetness to the sauce.
  • 2 units bay leaves Enhances the flavor.
  • 1 tsp cumin Ground spice.
  • 1 tsp oregano Dried herb.
  • to taste Salt and pepper For seasoning.
  • 6 units Corn tortillas For serving tacos.
  • 1 cup shredded cheese (such as Oaxaca or mozzarella) For filling the tacos.
  • 1 cup consommé For dipping.

Method
 

Preparation of Ingredients
  1. Toast the guajillo and ancho chiles in a dry skillet until fragrant, then soak them in hot water for about 20 minutes.
  2. In a blender, combine the soaked chiles, garlic, onion, bay leaves, cumin, oregano, and a bit of the soaking water to create a smooth sauce.
  3. Season the beef with salt and pepper and place it in a slow cooker.
Cooking the Beef
  1. Pour the sauce over the beef, cover, and cook on low for 8 hours.
  2. Once cooked, shred the beef with two forks.
Making the Tacos
  1. Heat a skillet over medium heat.
  2. For each taco, dip a corn tortilla in the consommé, then place it in the skillet.
  3. Add some shredded beef and cheese, fold, and cook until the tortilla is crispy and the cheese is melted.
  4. Serve the tacos with a side of consommé for dipping.

Notes

For more flavor, marinate the beef in the sauce overnight before cooking. Ensure to thoroughly toast the chiles for a richer taste. You can experiment with different types of cheese for variation.
