Ingredients
  

Meatloaf Muffins Base
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1/2 cup almond flour
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup BBQ sauce (gluten-free)
  • 1 each egg
  • Salt and pepper to taste
Sweet Potato Topping
  • 1 cup mashed sweet potato
  • Chopped parsley (optional, for garnish)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine ground meat, onion, garlic, almond flour, BBQ sauce, egg, salt, and pepper.
  3. Mix until well combined and shape the mixture into muffins.
  4. Spoon mashed sweet potato on top of each muffin.
Baking
  1. Bake for 25-30 minutes or until the internal temperature reaches 160°F (70°C).
  2. Garnish with chopped parsley if desired and serve warm.

Notes

These muffins are delicious served warm right out of the oven. Pair them with a fresh salad or vegetable side for a complete meal. For storage, let the muffins cool and keep in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 1-2 minutes.
