Banana S'mores Muffins

Ingredients
  

Wet Ingredients
  • 2 pieces ripe bananas, mashed Must be very ripe for best flavor.
  • 1/3 cup vegetable oil Can substitute with melted coconut oil or melted butter.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar For a richer flavor, consider using brown sugar.
Dry Ingredients
  • 1 cup all-purpose flour Can be substituted with a gluten-free blend.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Mix-ins
  • 1/2 cup mini marshmallows
  • 1/2 cup chocolate chips Can substitute with peanut butter chips.
  • 1/4 cup graham cracker crumbs Optional, for topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the mashed bananas, sugar, vegetable oil, egg, and vanilla extract, mixing until well blended.
  3. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. Fold in the mini marshmallows, chocolate chips, and graham cracker crumbs.
  6. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool slightly before serving.

Notes

These muffins are best served warm. Optionally, sprinkle graham cracker crumbs on top for extra crunch. Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
