Preparation
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir in peanut butter, honey or maple syrup, and vanilla extract until well combined.
- In another bowl, mix rolled oats, baking powder, and salt.
- Combine the dry ingredients with the banana mixture.
- If desired, fold in optional add-ins like chocolate chips or nuts.
- Pour the mixture into the prepared baking dish and spread it evenly.
Baking
- Bake for 20-25 minutes or until the edges start to turn golden.
- Allow to cool, then cut into bars and enjoy!
Notes
Store these bars in an airtight container. They will stay fresh for about a week. You can also freeze them for longer storage. Just thaw before eating if you freeze them. Try mixing in cinnamon for an extra flavor boost.
