Main Ingredients
  • 2 pieces ripe bananas Make sure they are really ripe for the best flavor.
  • 1 cup rolled oats Certified gluten-free oats can be used for a gluten-free version.
  • 1/3 cup peanut butter Creamy or crunchy peanut butter can be used.
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Optional Add-ins
  • chocolate chips Fold into the mixture if desired.
  • nuts Fold into the mixture if desired.
  • dried fruits Fold into the mixture if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in peanut butter, honey or maple syrup, and vanilla extract until well combined.
  4. In another bowl, mix rolled oats, baking powder, and salt.
  5. Combine the dry ingredients with the banana mixture.
  6. If desired, fold in optional add-ins like chocolate chips or nuts.
  7. Pour the mixture into the prepared baking dish and spread it evenly.
Baking
  1. Bake for 20-25 minutes or until the edges start to turn golden.
  2. Allow to cool, then cut into bars and enjoy!

Notes

Store these bars in an airtight container. They will stay fresh for about a week. You can also freeze them for longer storage. Just thaw before eating if you freeze them. Try mixing in cinnamon for an extra flavor boost.
