Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups peeled and diced apples Use tart apples like Granny Smith for best results.
Cream Cheese Filling
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract for filling
Cinnamon Topping
  • 1/2 teaspoon ground cinnamon for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, mix the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the diced apples.
Making the Filling
  1. In another bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
Assembly and Baking
  1. Pour half of the batter into the prepared baking dish, spreading it evenly.
  2. Spoon the cream cheese filling over the batter, then pour the remaining batter on top.
  3. To make a cinnamon topping, mix the cinnamon with a little sugar and sprinkle it over the top of the batter.
  4. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Let it cool slightly before serving. Enjoy your apple coffee cake!

Notes
