Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, mix the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the diced apples.
Making the Filling
- In another bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
Assembly and Baking
- Pour half of the batter into the prepared baking dish, spreading it evenly.
- Spoon the cream cheese filling over the batter, then pour the remaining batter on top.
- To make a cinnamon topping, mix the cinnamon with a little sugar and sprinkle it over the top of the batter.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool slightly before serving. Enjoy your apple coffee cake!
