Cobbler Topping
  • 1 cup almond flour Provides a unique flavor and texture.
  • 1/4 cup coconut sugar Feel free to adjust the sweetness.
  • 1/4 cup coconut oil, melted Can be replaced with plant-based butter for a vegan version.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup almond milk (optional for moisture) Use if needed for moisture.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the sliced peaches with a little coconut sugar and set aside.
  3. In another bowl, mix almond flour, coconut sugar, baking powder, salt, and cinnamon.
  4. Add melted coconut oil and vanilla extract to the dry ingredients and mix until crumbly dough forms.
Baking
  1. Place the peaches in a baking dish and evenly crumble the almond flour mixture on top.
  2. Bake for 25-30 minutes or until the topping is golden brown and the peaches are bubbly.
  3. Let cool slightly before serving.

Notes

This cobbler can be served warm or at room temperature. For a special touch, try adding a scoop of vanilla ice cream on top. It also pairs well with whipped cream. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave until heated through.
