Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the cooked ground beef with the enchilada sauce and diced onions.
- Place a portion of the beef mixture in each tortilla and roll them up.
- Arrange the rolled tortillas in a baking dish, seam side down.
- Pour any remaining enchilada sauce over the top and sprinkle with shredded cheese.
Baking
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve hot with toppings as desired.
Notes
These enchiladas can be served with sour cream or fresh salsa. Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, warm in the oven or microwave.
