  • 6 pieces flour tortillas Make sure they are large enough to hold the filling.
  • 1/2 cup diced onions Can be substituted with green onions for a milder flavor.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the cooked ground beef with the enchilada sauce and diced onions.
  3. Place a portion of the beef mixture in each tortilla and roll them up.
  4. Arrange the rolled tortillas in a baking dish, seam side down.
  5. Pour any remaining enchilada sauce over the top and sprinkle with shredded cheese.
Baking
  1. Bake for 20-25 minutes until cheese is melted and bubbly.
  2. Serve hot with toppings as desired.

Notes
