  • 2 1/4 cups all-purpose flour Avoid overmixing to maintain a tender texture.
Optional Flavorings
  • 1 tsp pure vanilla extract Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
Mixing
  1. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  2. Gradually add the flour, mixing on low speed until just combined and a soft dough forms.
Shaping
  1. Turn the dough onto a lightly floured surface. Gently knead a few times, then roll out to about 1/2-inch thickness. Cut into desired shapes.
Baking
  1. Transfer cookies to the prepared baking sheet. Prick the tops with a fork. Bake for 20-25 minutes until edges are barely golden.
  2. Cool cookies on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve with tea or coffee. Store in an airtight container at room temperature for up to 2 weeks or freeze for up to 3 months. Layer between parchment paper when freezing.
