  • 2 pieces ripe bananas The riper, the sweeter!
  • 1 cup rolled oats Gluten-free if needed.
  • 1/4 cup add-ins of your choice Optional: chocolate chips, raisins, chopped nuts, or dried fruit.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a bowl until smooth.
  3. Add the oats to the mashed bananas and stir until well combined. Fold in any add-ins.
  4. Let the mixture sit for about 5 minutes.
Baking
  1. Scoop the dough onto the prepared baking sheet. Flatten each cookie slightly.
  2. Bake for 12-15 minutes or until the edges are golden brown.
  3. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

To enhance flavor, add a teaspoon of cinnamon or vanilla extract. For a crunchy texture, bake for an extra 2-3 minutes. Store in an airtight container for up to 3 days at room temperature, up to a week in the fridge, or freeze for up to 3 months.
