Method
Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt (if using).
- Pour in the cold heavy cream and stir with a wooden spoon or fork until just combined. The dough will be slightly sticky—do not overmix!
Shaping and Cutting
- Turn the dough onto a lightly floured surface and gently pat it into a 1-inch-thick rectangle.
- Use a 2.5-inch round cutter (or a glass) to cut out biscuits. Press straight down—no twisting—to ensure even rising.
Baking
- Place biscuits on the baking sheet, brush tops with a little extra cream (optional for browning), and bake for 12–15 minutes until golden.
- Let cool for 2–3 minutes before serving. Enjoy with butter, jam, or gravy!
Notes
For an extra flaky texture, fold the dough in half before cutting—this creates layers, just like in a classic easy biscuit recipe. Variations include adding cheddar, herbs, or sugar for sweetness.
